Recipe: Dijon Thyme Pork with Scalloped Potatoes & Apples

This is one of the Publix Apron's Simple Meals.

I can't say it was super simple, it was a bit more involved then I'm used to but a bit more gourmet like also and well worth the work.

I made a few modifications to the recipe to make it a little cheaper, instead of buying the already ready items I diced things myself.

A nice side with this is steamed Broccoli. Even my 7 yr olds plate was empty so you know this is pretty tasty and how about that I just got everyone veggies and fruit in one meal.

Ingredients
Pork Tenderloin (1 lb) or I used Pork Sirloin Cutlets. (cheaper)
2 cups granny smith apple slices (Approx 2 apples)
1 oz bag fresh thyme
1/4 cup diced red onion
1 1/2 Tbs minced garlic
2oz white cheddar cheese
2 Tbs herb garlic butter (these come as individual sticks)
1 20 oz package of Simply Potatoes homestyle sliced potatoes.
2 Tbs Dijon mustard
1/4 cup dry white wine (I bought a bottle of Arbor Mist Chardonnay and it worked perfectly)
2 & 1/4 cups milk
2 tsp flour

COOKING SEQUENCE
* Prepare potatoes through step 2
* Prepare pork; began to cook pork slices
*Complete potatoes and pork; serve

DIJON THYME PORK
INGREDIENTS
1 Tbs fresh thyme (finely chopped, leaves removed from stems)
1 lb of pork
2 Tbs Dijon mustard
1 1/2 Tbs minced garlic
1 Tbs herd garlic butter
1/4 cup white wine
1/4 cup milk
2 tsps flour

PREP
If using tenderloin cut diagonally into about eight 1 inch thick slices. If using cutlets cut each in half to make decent serving sizes.

STEPS
1. COMBINE in medium bowl, thyme, mustard and garlic. Add pork slices; press and turn slices to coat. Set aside.
2. Preheat large sauté pan on medium heat 2-3 mins. Place butter in pan then add pork; cook 5-6 mins each side or untill browned and 160°F
3. COMBINE wine, milk, and flour. Add to pork; cook and stir 2-3 mins or until sauce thickens. Serve sauce with pork.

SCALLOPED POTATOES & APPLES
INGREDIENTS
2 cups granny smith apple slices (Approx 2 apples)
1 Tbs herb garlic butter
1/4 cup diced red onion
1 20 oz package Simply Potatoes homestyle sliced potatoes
2 cups milk
2 oz white cheddar cheese

STEPS
1. PREHEAT large sauté pan on medium heat 2-3 mins. Cut apples into thin slices. Place butter in pan then add onions; cook and stir 3-4 mins or until soft.
2. STIR in apples and remaining ingredients (EXCEPT CHEESE) and cover; cook and stir for 18 mins or until potatoes are tender. Shred Cheese
3. REDUCE heat to low. Spinkle with cheese and cover; cook 4-5 mins (do not stir) or until cheese melts. Serve
