Lemon Pepper Tuna Pasta

This ended up being a quicky recipe, kinda reworked a recipe from a pouch of starkist tuna.

2 cans tuna in water do not drain
13.25 oz box of whole wheat penne pasta
1 tsp minced garlic
2 cups frozen green beans
4 Tbsp olive Oil
1 bell pepper (original recipe called for red bell couldn't find one so I grabbed green)
dash of thyme
dash of salt

Cook pasta according to package directions, Drain
when al dente, meanwhile in a medium skillet, heat oil over medium-high heat. Add garlic and peppers and saute for 1-2 mins until crisp. Add green beans, tuna, thyme and salt. Heat for 1 - 2 mins or until hot. Mix with drained pasta and serve.

Serves 4

RECIPE - Savory Meat Loaf

This is the recipe I follow for meatloaf that has become a true family favorite. It comes from my Betty Crocker Cookbook that was given to me by Grandmother when Hubby and I got married. Some modifications done that adds the EASY in the name.

SAVORY EASY MEATLOAF

2 pounds lean ground beef
1 cup milk
1 Tablespoon Worcestershire sauce
1/4 teaspoon dried rubbed sage - (looks kinda fluffy in the jar)
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1/8 teaspoon garlic powder
1 egg
1/2 cup seasoned bread crumbs
1/4 teaspoon minced onion (equals 1/4 cup fresh onion)
1/2 cup ketchup, chili sauce or barbecue sauce

1. Heat oven to 350°F.

2. Mix all ingredients except ketchup. Spread mixture in ungreased loaf pan, 8 1/2x4 1/2x2 1/2 or 9x5x3 inches, or shape into 9x5-inch loaf in ungreased rectangular pan, 13x9x2 inches. Spread ketchup over top.

3. Insert meat thermometer so tip is in center of loaf. Bake uncovered 1 hour to 1 hour 30 minutes or until thermometer reads 160°F

I suggested serving with some Mashed Potatoes for a full happy family ;)

RECIPE: Quick Strawberry Smoothie

QUICK STRAWBERRY SMOOTHIE

3 Scoops Rainbow Sherbert
3 Scoops Thawed frozen strawberries
1 cup 7up

Blend well and serve

Serves 1

RECIPE: Sausage & Rice Casserole

Sausage & Rice Casserole

1 lb sausage tube
2 3.5 oz bags boil in bag rice (not gonna follow box directions)
5 cups water
1/2 cup butter or margarine
2 pkgs dry chicken Noodle soup mix from 4.2 oz box
1 cup diced frozen onion
1 cup diced frozen green pepper
1 cup chopped celery
(Side note: try finding a bag of ONION/GREEN PEPPER/CELERY mixed in frozen section and use 3 cups)
1/4 cup fresh chopped parsley
1/8 tsp paprika
1/2 tsp garlic powder

*Preheat Oven to 350 degrees
*Cook and Crumble Sausage on medium heat until brown. Drain. Set aside
*In large pot bring water to boil. Add Rice and Soup Mix and boil for 10 mins while stirring
*Add sausage, peppers, onion, celery, parsley, seasonings & butter. Stir Together.
*Pour into 2 qt Casserole dish and sprinkle paprika over the top.
*Bake for 40 - 50 mins till liquid is all absorbed.

Serves 4 - 5

RECIPE: Grilled Lemon Pepper Chicken with Garlic Butter Pasta

GRILLED LEMON PEPPER CHICKEN with GARLIC BUTTER PASTA


CHICKEN
6 Boneless Skinless Chicken Breast
Mrs. Dash Salt Free Lemon Pepper Seasoning
1/4 Cup Olive Oil

GARLIC BUTTER PASTA
16 oz Fettuccine Pasta
1/2 Cup Olive Oil
1 tsp Oregano
1 tsp Garlic Powder
Salt, Pepper and Parmesan to taste

Grill Chicken Breasts seasoned with lemon pepper till its half cooked, transfer from grill to pan with olive oil and continue to saute in oil till fully cooked.

Cook pasta till al dente. Drain.
Combine Olive Oil, Oregano & Garlic Power in microwave safe dish and heat for 1 min then stir into pasta when it is done. Add Salt, Pepper and Parmesan to taste

Serves 4 - 6

RECIPE - EASY CROCK POT CHILI

EASY CROCK POT CHILI

2 lbs ground beef
2 cans beans your choice (mix it up some)
2 cans diced tomatoes (Or GreatValue Chili Ready Tomatoes)
2 packages Chili Seasoning your choice

Brown the ground beef, drain and put in crock pot
Add all other ingredients
Stir together well

Set Crock Pot on Low for 8 -10 Hrs or for faster cooking 4 - 5 hrs on High.

Serve with Saltines

Serves 4 if your having just that.

Lets Make Fun of ME!! :\

Ok so Mr. Corner Sitter and I have decided to make a big change in how we are eating and first step was for me to figure ways to cut back on his salt intake because of his BP issues. Well we wanted Tacos this week and of course usually I would have bought a pack of Taco seasoning but as we all know to well those are loaded with salt.
So I did some searching online for Taco seasoning recipes and came across this one.

INGREDIENTS
  • 2 tablespoons chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 tablespoon ground cumin
  • 2 teaspoons sea salt
  • 2 teaspoons black pepper
This is basically what I would consider the equivalent of 2 packs from the store.

Ok here is where the funny part comes in, you see that last item where it says 2 teaspoons, well I was writing the recipe down and wrote 2 Tbs. OMG these tacos have a major kick LMAO. Hubby is about breathing fire.

I came back to the computer after we realized how hot it was and re read the recipe and I felt so so stupid :|

Oysters, tasty morsels

Imagine if Oysters created something other then pearls. I can bet that people would be scrambling to catch oysters even more if they made diamonds. Or perhaps they could make opals, emeralds or rubies. Yes that would be amazing, but what is even more amazing is that they provide low calorie proteins that are an excellent source of zinc, vitamin B-12, and omega-3 fatty acids.

Gulf oysters are consumed by many and most often in great quantities. There are some precautions that should be taken.
There is a new site call BeOysterAware.com that has all sorts of information regarding how to make sure the oysters you eat are safe. They just want to point out all the safety points when it comes to consuming those tasty mollusks.

Like did you know if you are in an at risk category such as if you have liver disease, diabetes, cancer, or stomach disorders you should avoid raw oysters and make sure the oysters you do consume have been post harvest processed and for the highest amount of protection consume them properly cooked.

Strawberry Daquiri - My Version

1/2 cup Arbor Mist Mixed Berry Wine
6 -8 ice cubes
1/2 cup strawberrys that have been sitting with sugar to juice

Mix all together in a blender to ice is well crushed.
