RECIPE - Savory Meat Loaf

This is the recipe I follow for meatloaf that has become a true family favorite. It comes from my Betty Crocker Cookbook that was given to me by Grandmother when Hubby and I got married. Some modifications done that adds the EASY in the name.

SAVORY EASY MEATLOAF

2 pounds lean ground beef
1 cup milk
1 Tablespoon Worcestershire sauce
1/4 teaspoon dried rubbed sage - (looks kinda fluffy in the jar)
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1/8 teaspoon garlic powder
1 egg
1/2 cup seasoned bread crumbs
1/4 teaspoon minced onion (equals 1/4 cup fresh onion)
1/2 cup ketchup, chili sauce or barbecue sauce

1. Heat oven to 350°F.

2. Mix all ingredients except ketchup. Spread mixture in ungreased loaf pan, 8 1/2x4 1/2x2 1/2 or 9x5x3 inches, or shape into 9x5-inch loaf in ungreased rectangular pan, 13x9x2 inches. Spread ketchup over top.

3. Insert meat thermometer so tip is in center of loaf. Bake uncovered 1 hour to 1 hour 30 minutes or until thermometer reads 160°F

I suggested serving with some Mashed Potatoes for a full happy family ;)

Lets Make Fun of ME!! :\

Ok so Mr. Corner Sitter and I have decided to make a big change in how we are eating and first step was for me to figure ways to cut back on his salt intake because of his BP issues. Well we wanted Tacos this week and of course usually I would have bought a pack of Taco seasoning but as we all know to well those are loaded with salt.
So I did some searching online for Taco seasoning recipes and came across this one.

INGREDIENTS
  • 2 tablespoons chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 tablespoon ground cumin
  • 2 teaspoons sea salt
  • 2 teaspoons black pepper
This is basically what I would consider the equivalent of 2 packs from the store.

Ok here is where the funny part comes in, you see that last item where it says 2 teaspoons, well I was writing the recipe down and wrote 2 Tbs. OMG these tacos have a major kick LMAO. Hubby is about breathing fire.

I came back to the computer after we realized how hot it was and re read the recipe and I felt so so stupid :|

OK so now here is your turn to laugh your keasters off at me.

Going out on your anniversary with kids

Ok so as my previous post stated today is our 6th wedding anniversary, i nudged and nudged to go out for dinner tonight even if it required taking the kids since we had no one to watch them. We went to Sonny's as that was one of the choices I presented hubby LOL. The kids were slightly tolerable but everyone around us was terrible. Its amazing how civilized people have forgotten how to act like they are civilized.

We had a family behind us that the husband got up and went out to the car with his kid and their to go boxes and left his wife who was on a cane and either his mother or her mother who is also on a cane to fend for themselves. The waitress helped the younger woman out by moving the table after she had just requested 50 million things of this poor waitress and then the nice waitress also helped the older woman up.

Next we have this loud outspoken family over a few tables from us and they are harassing the waitresses and then have the nerve to sit and hold up a piece of meat from their plate making a huge loud deal about if it was a piece of a rat. I mean hello, kidding or not there are people eating. Thankfully we were basically done. My hubby was just waiting for his last reorder.

Then to complete this wonderful evening our waitress started rushing us out of the restaurant and it wasn't even 8:30 yet. She was practically just standing waiting for us to lay our credit card down with the check so she could get rid of us.

So all in all our kids thankfully were kinda behaved at least compared to the wonderful patrons and employees at the restaurant we ate at. SIGH
